  • Fresh stinging nettle leaves — about 3 cups packed (75g / 2.6 oz)
  • Fresh wild garlic leaves — about 1 cup packed (25g / 0.9 oz)
  • Sea salt or kosher salt — 2% of the fresh herb weight (about 2g / ½ tsp)
  • Optional: 1 teaspoon lemon zest (for brightness)

Step 1 – Harvest and Prepare Nettle (Carefully!)

Wear thick gloves! Harvest fresh nettle tips (the top 4-6 inches of young plants) from a clean, pesticide-free area. Rinse thoroughly in cool water. Pat dry. The stinging hairs are neutralized by heat or by the blitzing process.

Step 2 – Harvest Wild Garlic

Harvest wild garlic leaves from the same clean area. Rinse and pat dry. Remove any yellow or wilted leaves.

Step 3 – Weigh and Calculate Salt

Weigh your fresh herbs together (nettle + wild garlic). Target about 100g (3.5 oz) total. Calculate 2% salt: 100g × 0.02 = 2g salt (about ½ teaspoon).

Step 4 – Blanch the Nettle (Optional but Recommended)

For the brightest green color and to neutralize the sting immediately, blanch nettle leaves in boiling water for 30 seconds, then plunge into ice water. Squeeze out excess water before blitzing. (This step also removes oxalic acid, making the nutrients more bioavailable.)

Step 5 – Blitz Everything Together

Combine the blanched nettle, wild garlic, salt, and lemon zest (if using) in a food processor. Blitz until you have a vibrant green paste. The color should be intense and beautiful.

Step 6 – Dry the Herb Salt

Recommended method: Spread the paste thinly on dehydrator trays. Dry at 95-105°F (35-40°C) for 6-12 hours until completely crisp.
