Recipe: Dandelion Bread

Ingredients:

  • - 2 cups unbleached flour
  • - 2 tsp baking powder
  • - 1/2 tsp salt
  • - 1 cup dandelion petals

  • - 4 tbsp honey
  • - 1 egg
  • - Scant 1 1/2 cups milk

Instructions:

1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Butter a bread tin or muffin tin, ensuring a non-stick surface for the bread.

2. In a large bowl, combine the dry ingredients: unbleached flour, baking powder, salt, and dandelion petals. Mix well, making sure to separate any clumps of petals.

3. In a separate bowl, mix together the milk, honey, canola oil, and beat in the egg until well combined.

4. Add the liquid ingredients to the dry ingredients and stir until just combined. The batter should be fairly wet and lumpy, so be careful not to overmix.

5. Pour the batter into the buttered bread tin or muffin tin, filling them about three-quarters full.

6. If you are making muffins, bake them for 20-25 minutes. For bread, bake for 25-30 minutes or more. At the 25-minute mark, use a toothpick to check the doneness of the bread. If the toothpick comes out too moist, lower the oven temperature and continue baking, checking every five minutes until it reaches the desired consistency.

7. Once the bread or muffins are golden brown and a toothpick inserted into the center comes out clean, remove them from the oven.

8. Allow the dandelion bread to cool for a few minutes before removing it from the tin. Transfer it to a wire rack to cool completely.
