Recipe: French Onion Soup

Ingredients:

  • - 1 tablespoon butter
  • - 4 pounds onions, thinly sliced
  • - 1 tablespoon salt
  • - 1 teaspoon ground black pepper
  • - 1 teaspoon dried thyme
  • - 3 cups dry white wine, divided
  • - 3 quarts beef bone broth, or commercial canned chicken, beef, or vegetable stock

Instructions:

1. In an 8-quart stainless steel or enameled Dutch oven, melt the butter over medium-low heat.

2. Stir in the sliced onions, salt, black pepper, and dried thyme, along with 2 cups of the white wine. Cover the pot and cook for 1 hour, or until the onions are very tender, stirring occasionally.

3. Uncover the pot and continue cooking, stirring constantly, until the onions are caramelized and reach a light caramel color, approximately 50 more minutes.

4. Add the remaining 1 cup of white wine to the pot and cook for an additional 2 minutes, stirring to loosen any browned bits from the bottom.

5. Stir in the beef bone broth (or your preferred stock). Bring the mixture to a boil, then reduce the heat and simmer uncovered for 15 minutes, allowing the flavors to meld together.

6. Ladle the hot soup into hot canning jars, leaving a 1-inch headspace. Remove any air bubbles and wipe the jar rims clean. Place lids and bands on the jars, adjusting the bands until fingertip tight.

7. Process pint jars for 60 minutes or quart jars for 1 hour and 15 minutes using a pressure canner. Follow your canner's manual for specific instructions.

8. Once the processing time is complete, turn off the heat and allow the pressure canner to cool to zero pressure. Let it stand for an additional 5 minutes before removing the lid to prevent siphoning.

9. After 10 minutes, carefully remove the jars from the canner and allow them to cool. Test the lids for a proper seal after 24 hours.

  1. I am not much of a wine drinker, so when you say a dry white wine, what exactly do you mean?
