Recipe: Homemade Corn Cob Jelly

Ingredients:

  • - 1 dozen medium to large fresh corn cobs (kernels removed)
  • - 2 quarts water
  • - 1 (1 3/4 ounce) package Sure Jell powdered pectin or other full sugar pectin
  • - 3 cups sugar

Instructions:

1. To make corn cob juice, break the corn cobs into chunks. Place the cobs in a large pot and add 2 quarts of water or enough to cover them. Bring the water to a boil, then reduce the heat and simmer, covered, for 35 to 40 minutes, stirring occasionally.

2. Pour the liquid through cheesecloth, a jelly bag, or a flour sack towel to strain out the solids. For a clear jelly, avoid squeezing the bag or cloth during straining. However, if you prefer a stronger corn flavor, you can give it a gentle squeeze.

3. Measure 3 cups of corn cob juice into a 6-8 quart stock pot. Add water if necessary to ensure you have 3 cups of liquid. Using a heavy-bottomed pot helps prevent scorching.

4. Stir in the pectin and bring the mixture to a boil.

5. Add the sugar and bring the mixture back to a full rolling boil, stirring constantly. Let it boil for 5 minutes, stirring frequently.

6. The jelly will bubble up and may form foam. This is normal and edible, although it may affect the clarity of the jelly.

7. Remove the pot from heat and skim off any foam, if desired. Pour the hot jelly into hot jars, leaving a ¼-inch headspace.

8. Wipe the rims of the jars with a dampened clean towel. Seal the jars with two-piece metal canning lids, tightening them finger-tight.

9. Process the jars in a Boiling Water Canner for 10 minutes. Adjust the processing time if you're at a high altitude.
