  • 4. After the cooking time, remove the pot from the heat and let the pasta sit in the hot        water for about 5 minutes.
  • 5. Drain the pasta and rinse it under cold water to stop the cooking process.
  • 6. Process the pasta in a freeze dryer to preserve its texture and flavor.
