Ingredients:

Instructions:

  • 1. Start by preparing the tomatoes. Wash them thoroughly and remove any stems or          blemishes. If desired, you can blanch the tomatoes in boiling water for a minute or        two to make peeling easier. Once blanched, transfer them to an ice bath to cool.            Peel  the skin off and chop the tomatoes into small pieces.
  • 2. In a large pot, heat some olive oil over medium heat. Add the chopped onions and        minced garlic, sautéing until they turn translucent and fragrant.
  • 3. Add the chopped tomatoes to the pot, along with the fresh basil leaves. Stir well to        combine the ingredients.
  • 4. Reduce the heat to low and let the sauce simmer uncovered for about 1-2 hours, or        until it thickens to your desired consistency. Stir occasionally to prevent sticking.
  • 5. Once the sauce has thickened, season it with salt and pepper to taste. Adjust the            seasoning according to your preferences.
  • 6. While the sauce is simmering, prepare your half-pint jars and lids by washing them      with warm, soapy water. Rinse them thoroughly and sterilize them by placing them      in a pot of boiling water for a few minutes. Remove them from the boiling water          and allow them to air dry.
  • 7. Carefully ladle the hot pasta sauce into the sterilized half-pint jars, leaving about          1/2 inch of headspace at the top. Wipe the rims of the jars with a clean, damp cloth        to remove any sauce residue.
  • 8. Place the lids on the jars and tighten them securely. You can use a water bath                canning method to further preserve the sauce, following the instructions for your           specific canning equipment and processing times.
  • 9. Allow the jars to cool completely before storing them in a cool, dark place like a            pantry. Properly canned pasta sauce can be stored for up to a year.
