Recipe: Homemade Freeze-Dried Strawberries
Ingredients:
- - 8 pounds of fresh strawberries
Equipment:
- - Food dehydrator or freeze-drier
Instructions:
1. Prepare the Strawberries:
Wash the strawberries under cold water and remove the stems. Pat them dry with a clean kitchen towel or paper towels. Ensure that the strawberries are ripe and free from any blemishes.
2. Slice the Strawberries:
Slice the strawberries into uniform pieces, approximately ¼ inch thick. This will ensure even drying and consistent results.
3. Arrange the Strawberries:
Place the strawberry slices in a single layer on the trays of your food dehydrator or freeze-drier. Make sure to leave some space between the slices to allow for proper air circulation.
4. Set the Temperature and Time:
Follow the manufacturer's instructions for your specific dehydrator or freeze-drier. Set the temperature to around 135°F (57°C) for a food dehydrator or follow the recommended settings for your freeze-drier. The drying time may vary depending on the equipment and the thickness of the strawberry slices. Typically, it can take anywhere from 8 to 12 hours.
5. Monitor the Drying Process:
Periodically check the progress of the strawberries. They should become firm and dry to the touch, with no moisture remaining. The berries will shrink in size during the process.
6. Cool and Store:
Once the strawberries are completely dry, remove them from the dehydrator or freeze-drier and let them cool to room temperature. Transfer the freeze-dried strawberries to an airtight container or resealable bags. Store them in a cool, dry place away from direct sunlight.
7. Enjoy the Freeze-Dried Strawberries:
The freeze-dried strawberries can be enjoyed as a healthy and convenient snack. They have an intense, concentrated flavor and a delightfully crisp texture. They can also be used in various culinary applications, such as adding them to breakfast cereals, trail mixes, baked goods, or rehydrating them for use in smoothies or desserts.
Preserving the flavors of summer is a delightful way to enjoy the bounty of fresh strawberries all year round.
With the simple process of freeze-drying, you can transform 8 pounds of fresh strawberries into 13.5 ounces of flavorful and crisp berries that are sure to become a family favorite. Whether enjoyed as a snack or incorporated into various recipes, these homemade freeze-dried strawberries will bring a taste of summer to your table no matter the season. So, savor the sweetness and tang of these delightful treats, and let the memories of sunny days linger with each bite.

This post is suspect in that the directions are for DEHYRATING and not freeze drying. The image is freeze dryer trays, the directions say single layer with space between, and the temp is dehydrator.
