  1. Usually a pinch of salt is included in this recipe. And I was wondering doesn’t a mixture of sugar and water thicken as you continue to boil it? I was going to try that before I added the Coco. What do you think?

    1. Mixing the cocoa in with the sugar at the start ensures that it'll mix smoothly, if you add dry cocoa to the hot sugar water after you'll have a lumpy mess since the cocoa will clump. (it's like if you dump dry flour into the gravy without making a slurry first)
