Dill Pickle Delights: A Guide to Homemade Pickling and our Flavorful Recipe

Our dill pickle project began with a craving for the classic pickle taste, but also a desire to control the ingredients and enjoy the freshness of homemade goodness. After experimenting with various recipes and techniques, we've landed on a simple yet fantastic recipe that we're excited to share with you.
Here's what you'll need to get started:
Ingredients:
- - 4 cups of pickling cucumbers (about 2 pounds), washed and sliced into spears or rounds
- - 3 cups of water
- - 1 cup of distilled white vinegar
- - 1/4 cup of pickling salt
- - 2 tablespoons of dill seeds
- - 4 cloves of garlic, peeled and lightly crushed
- - 2 teaspoons of whole black peppercorns
- - 1 teaspoon of mustard seeds (optional)
- - 1/2 teaspoon of red pepper flakes (optional)
Instructions:
1. Prepare the pickling liquid:
In a saucepan, combine the water, vinegar, and pickling salt. Bring the mixture to a boil, stirring until the salt dissolves completely. Remove the saucepan from the heat and set it aside to cool slightly.
2. Pack the jars:
In sterilized canning jars, place the dill seeds, garlic cloves, black peppercorns, mustard seeds (if using), and red pepper flakes (if using). Pack the cucumber spears or rounds tightly into the jars, leaving about 1/2 inch of headspace at the top.
3. Fill the jars with the pickling liquid:
Carefully pour the slightly cooled pickling liquid into the jars, making sure to fully cover the cucumbers. Leave about 1/4 inch of headspace to allow for expansion during the pickling process.
4. Remove air bubbles and seal the jars:
Run a non-metallic utensil or bubble remover along the inside of the jars to release any trapped air bubbles. Wipe the jar rims clean with a damp cloth. Place the sterilized lids on the jars and screw on the bands until fingertip tight.
5. Process the jars:
If you prefer shelf-stable pickles, you can process the jars in a boiling water bath canner for about 10 minutes. Alternatively, you can store the jars in the refrigerator for refrigerator pickles, which will have a crisper texture.
6. Let the pickles rest and develop flavors:
Regardless of whether you choose to process or refrigerate your pickles, it's important to let them rest for at least 24 hours before enjoying. During this time, the flavors will meld together, resulting in a more delicious pickle experience.
