There's something truly special about enjoying a glass of freshly squeezed orange juice, especially when it comes from the fruits of your own trees.

 Back in March, we embarked on a mission to capture the vibrant flavors of the season by juicing all the oranges from our bountiful orchard. The result? Shelf-stable orange juice that not only tastes amazing but also allows us to savor the essence of citrus all year round. Join us as we unveil the process of preserving this liquid gold, unlocking the secret to creating a refreshing, homemade orange juice that will awaken your senses with every sip.

Preserving Homemade Orange Juice: A Step-by-Step Guide

1. Gathering the Oranges:

Harvest ripe and juicy oranges from your trees, ensuring they are free from blemishes or signs of decay. Choose a variety known for its excellent flavor and juiciness, such as Valencia or Navel oranges.

2. Extracting the Juice:

Thoroughly wash the oranges under cool running water to remove any dirt or debris. Cut each orange in half and extract the juice using a citrus juicer or a handheld juicer. Strain the juice through a fine-mesh sieve to remove any pulp or seeds.

3. Preparing the Canning Equipment:

Before beginning the canning process, ensure that your canning jars, lids, and bands are sterilized following the manufacturer's instructions. Sterilization is crucial for maintaining the integrity and shelf stability of the orange juice.

4. Heating the Orange Juice:

Pour the freshly squeezed orange juice into a large pot and heat it to a temperature of 195°F (90°C). Use a food thermometer to monitor the temperature accurately. Heating the juice helps ensure its safety and extends its shelf life.

5. Filling the Jars:

While the orange juice is heating, place the canning jars in a hot water bath to keep them warm. Once the juice reaches the desired temperature, carefully ladle it into the hot jars, leaving about ¼ inch of headspace. Wipe the jar rims clean to ensure a proper seal.

6. Processing the Jars:

Place the filled jars into a water bath canner, ensuring they are fully submerged. Process the jars for 15 minutes, adjusting the processing time based on your altitude if necessary. The water bath canning method creates a seal that preserves the orange juice and prevents spoilage.

7. Cooling and Storage:

After the processing time is complete, carefully remove the jars from the canner and place them on a towel-lined surface. Allow the jars to cool completely, undisturbed, for several hours or overnight. As they cool, you may hear the satisfying "pop" of the lids sealing, indicating a successful preservation.
