Living in Pinellas County, it's a delight to grow an abundance of leafy greens.


 However, sometimes we end up with more greens than we can consume, which is actually a good problem to have. About a year ago, I stumbled upon a Youtube channel that focuses on nutrient density and creating a nutrient-dense pantry. The host introduced me to the world of freeze-drying and dehydrating, inspiring me to invest in a dehydrator. Today, I'll share with you how to dehydrate leafy greens, transforming them into a vibrant and flavorful powder that can be used in soups and stews. Get ready to unlock the potential of your excess greens!

Harvesting and Preparing the Leafy Greens:

  • 1. Begin by harvesting an assortment of fresh leafy greens from your garden. This can      include spinach, kale, Swiss chard, collard greens, or any other greens you have            available.
  • 2. Thoroughly wash the greens to remove any dirt or debris.
  • 3. Pat the greens dry using a clean kitchen towel or paper towels. It's important to remove excess moisture to ensure efficient dehydration.

Dehydrating the Leafy Greens:

  • 1. Tear the leafy greens into smaller, manageable pieces.
  • 2. Arrange the torn greens in a single layer on the dehydrator trays. Leave space                between each piece to allow for proper airflow and even drying.
  • 3. Set the dehydrator to a low temperature, around 125°F to 135°F, and let it run for          approximately 8-12 hours. The exact drying time may vary depending on the                moisture content of the greens and the dehydrator model.
  • 4. Check the greens periodically during the drying process. They are ready when they      are crisp and brittle.

Powderizing the Dehydrated Greens:

  • 1. Once the greens are fully dehydrated, allow them to cool completely.
  • 2. Transfer the dried greens into a food processor or blender.
  • 3. Pulse the greens until they turn into a fine powder. You may need to do this in              batches, depending on the size of your processor or blender.
  • 4. Store the leafy green powder in an airtight container, away from moisture and              sunlight.

Utilizing the Flavorful Powder:

  • 1. The leafy green powder you've created is a versatile and nutrient-dense ingredient.
  • 2. Add a spoonful of the powder to your favorite soups, stews, or sauces to enhance          their nutritional value and add a burst of flavor.
  • 3. You can also mix the powder into smoothies or sprinkle it over roasted vegetables        for an extra nutrient boost.
