How to Make Amish Canned Green Beans: A Simple and Delicious Recipe

This year, I stumbled upon an Amish canning method for green beans that piqued my curiosity. 

Despite my husband not being a fan of canned green beans, I decided to give it a shot. And let me tell you, these beans may look a bit peculiar, but they are absolutely amazing! They retain their texture and taste just like fresh beans. Plus, they are not waterlogged like typical canned beans. To my surprise, my husband loved them too! Now I wish I had made more. 

What You'll Need:

  • - Fresh green beans, snapped to your preference
  • - For each quart of beans:
  •   - 1 tsp canning salt
  •   - 1/4 tsp ground pepper
  •   - 1 tablespoon of cooked crumbled bacon (optional)
  •   - 2 tablespoons of water

Instructions:

  • 1. Start by packing your quart jars as tightly as possible with the fresh green beans. Fill them up, making sure to leave enough headspace for the other ingredients.


2. For each quart jar, add the following ingredients: 

  •    - 1 tsp of canning salt to enhance the flavor.
  •    - 1/4 tsp of ground pepper to give it a little kick.
  •    - 1 tablespoon of cooked crumbled bacon for an extra burst of savory goodness (optional).
  •    - 2 tablespoons of water to help with the canning process.


  • 3. Once you have added all the ingredients, clean the rims of each jar to ensure a proper seal. Then, securely place the lids on the jars and tighten the rings finger tight.

  • 4. Now it's time to start the canning process. If you are using quart jars, pressure can them for 25 minutes. For pint jars, pressure can for 20 minutes. Remember to adjust the ingredients accordingly if you are using smaller jars (half all the ingredients except water).

  • 5. After the designated time, carefully remove the jars from the canner and let them cool. You'll notice that the beans will have cooked down a bit, but that's perfectly normal.

  • 6. Once the jars have cooled completely, check the seals to ensure they are airtight. Store them in a cool, dark place where they can be enjoyed for months to come.

Tips for Success:

  • - Choose the freshest green beans you can find to ensure the best flavor and texture.
  • - Make sure to clean the rims of the jars thoroughly before sealing them to prevent any potential issues with the seal.
  • - Adjust the seasoning to your liking. Feel free to add more salt, pepper, or even some other herbs or spices.
  • - If you want to make smaller portions, use pint jars and adjust the canning time accordingly.
