2 Simmer the Cobs with Vanilla Beans
In a 16 quart stock pot, combine the corn cobs and 1 ounce of Tanzania Vanilla Beans (split lengthwise). Add enough water to cover the cobs (about 16 quarts). Bring to a simmer and let it cook from sun up to sun down (about 8-10 hours). The liquid will reduce and become rich and flavorful.
3 Strain the Liquid
After simmering, remove the cobs and vanilla beans from the pot. Strain the liquid through a fine-mesh strainer or cheesecloth to remove any solids. You should have a beautiful, fragrant vanilla-corn broth.
4 Squeeze the Vanilla Beans
Take the vanilla beans and squeeze them out to extract every last bit of flavor. The seeds and remaining liquid from the beans are pure gold for your jelly.
