  • 3. After simmering, remove the pot from the heat and strain the liquid through a fine-        mesh sieve or cheesecloth to remove the vanilla bean pods. Return the strained              liquid to the pot.

  • 4. Stir in the granulated sugar, lemon juice, and the scraped vanilla bean seeds. Mix          well to dissolve the sugar completely.
  • 5. Return the pot to the stove and bring the mixture to a rolling boil over high heat.          Stir in the pectin according to the instructions on the packet.
  • 6. Once the mixture reaches a full rolling boil, continue boiling for the specified time        mentioned in the pectin instructions, usually around 1 minute. Stir constantly to            prevent sticking or burning.
  • 7. After the boiling time, remove the pot from the heat and skim off any foam that            may have formed on the surface.
  • 8. Carefully pour the hot jelly into sterilized jars, leaving about 1/4 inch of headspace.      Seal the jars tightly with sterilized lids.
  • 9. Allow the jars to cool at room temperature for a few hours. As the jelly cools, it will      begin to set.
  • 10. Once completely cooled and set, store the jars of Vanilly Jelly in the refrigerator.          The jelly will continue to thicken as it chills.
