Recipe: Homemade Cheese Whiz
Ingredients:
- - 31 pints of Cheese Whiz:
- - 6 lb Velveeta cheese, cubed
- - 3.5 cups evaporated milk
- - 1 quart milk
- - 1/2 lb butter
Instructions:
1. Prepare the Cheese Whiz Mixture:
In a large saucepan or pot, combine the cubed Velveeta cheese, evaporated milk, quart of milk, and butter. Place the saucepan over medium-low heat and begin melting the ingredients together.
2. Melt and Stir:
Continuously stir the mixture as the ingredients slowly melt and combine. Use a wooden spoon or a whisk to ensure even heat distribution and prevent the cheese from sticking to the bottom of the pan.
3. Achieve a Smooth Consistency:
Continue heating and stirring until the mixture reaches a smooth, creamy consistency. Make sure all the cheese has melted completely and is well incorporated with the milk and butter.
4. Jar the Cheese Whiz:
Once the Cheese Whiz mixture is smooth and fully melted, carefully transfer it into pint-sized jars. Leave a small amount of headspace at the top of each jar to allow for expansion during the water bath process.
5. Water Bath Canning:
Prepare a large pot or canner with enough water to fully submerge the pint jars. Place a rack or a towel at the bottom of the pot to prevent the jars from touching the direct heat source. Gently place the filled jars into the pot, ensuring they are upright and not touching each other.
6. Process the Jars:
Bring the water to a rolling boil and start the timer for 20 minutes. Maintain the boil throughout the process. After 20 minutes, carefully remove the jars from the water bath using jar tongs or oven mitts.
7. Cool and Store:
Place the jars on a clean towel or a cooling rack and allow them to cool completely. As the jars cool, you may hear a popping sound, indicating a proper seal. Once cooled, store the Cheese Whiz jars in a cool, dark place. Refrigerate after opening.
Usage Suggestions:
- Cheese Dip: Warm the Cheese Whiz in a microwave or on the stovetop and serve it as a delightful dip for tortilla chips, pretzels, or vegetables.
- Cheese Sauce: Heat the Cheese Whiz and drizzle it over nachos, fries, or steamed vegetables for a cheesy and flavorful sauce.
- Cheese Spread: Use the Cheese Whiz as a spread on sandwiches, burgers, or crackers for a burst of creamy and cheesy goodness.
With this homemade Cheese Whiz recipe, you can indulge in the rich, creamy, and cheesy flavors that only a homemade cheese sauce can provide.
Whether you're dipping, spreading, or incorporating it into your favorite dishes, this Cheese Whiz will elevate your culinary creations to new heights. So gather your ingredients, prepare your pint jars, and embark on a cheesy journey that will leave you craving more of this homemade delight.

I made the cheese whiz about a month ago. In re-arranging my jars I noticed that it was looking curdled and separating. (The butter went to the top. ) Can anyone tell me if this is right. All the lids snapped and it tasted good when I made it in the bowl. Thank you
