Instructions
Step 1: Prepare the Pumpkin
1. Select Your Pumpkin: Choose a small pie pumpkin, which is sweeter and more flavorful than larger carving pumpkins.
2. Cut Off the Stem: Carefully cut off the stem of the pumpkin with a sharp knife.
3. Place on Trivet: Set the pumpkin on the trivet inside the Instant Pot.
Step 2: Add Water
1. Add Water: Pour the appropriate amount of water into the bottom of the Instant Pot:
- For 8-quart: Add 2 cups of water.
- For 6-quart: Add 1 cup of water.
Step 3: Pressure Cook
1. Seal the Instant Pot: Close the lid and ensure the valve is set to the sealing position.
2. Set Cooking Time: Pressure cook on high for 15 minutes.
3. Natural Release: After the cooking time is complete, let the pressure naturally release for 5 minutes.
4. Quick Release Remaining Pressure: After 5 minutes, carefully switch the valve to the venting position to release any remaining pressure.
Step 4: Cool and Prepare
1. Remove the Pumpkin: Once all the pressure is released, open the lid and let the pumpkin cool for a few minutes.
2. Peel the Skin:The skin should easily come off. If it doesn’t, you can use a knife to help remove it.
3. Cut in Half and Remove Seeds: Slice the pumpkin in half and scoop out the seeds and stringy insides. You can save the seeds for roasting if you like!
Step 5: Process the Pumpkin
1. Blend in Food Processor: Cut the pumpkin into smaller chunks and place them in a food processor. Process until smooth and creamy.
2. Measure for Recipes: For pumpkin pie, you’ll need about 1 and 3/4 cups of puree.
