1. Begin by removing the stems from all the chillies. For a spicier sauce, leave 50g-100g of the chillies coarsely chopped with seeds. Place these chillies, along with the garlic, ginger, and 1 cup of vinegar, into a food processor.

2. Deseed the remaining chillies and coarsely chop them. Add these chillies to the food processor as well. Process the mixture until finely chopped and well combined.
