Homemade Ricotta on a Budget

Savvy Homesteader Beats High Grocery Prices by Making Her Own Ricotta Cheese

With the rising cost of groceries, one resourceful homesteader decided to take matters into her own hands and make her own ricotta cheese at home.

 Inspired by the high price of milk (currently $1.70 per gallon) and the convenience of canned ricotta, she set out to create a homemade version using just 3 simple ingredients.

An Experiment in Cheesemaking

Gathering only vinegar, salt, and milk, the homesteader embarked on a DIY ricotta project. She made 7 quarts of homemade ricotta, as well as a 7 gallon control batch, to see how her handcrafted version would compare.

The process was surprisingly straightforward. The homesteader heated the milk, added vinegar and salt, and then strained the curds from the whey. This easy technique resulted in a fresh, creamy ricotta cheese that was a fraction of the cost of the store-bought version.

By making her own ricotta, the homesteader was able to save a significant amount of money compared to purchasing pre-made ricotta. Not only that, but the homemade version had a wonderfully smooth and rich flavor that the family enjoyed.

Homemade Ricotta Cheese Recipe

Ingredients:

  • - 1 gallon whole milk
  • - 1/4 cup white vinegar
  • - 1 tsp salt

Instructions:

1. In a large pot, heat the milk over medium heat, stirring occasionally, until it reaches 195°F.

2. Remove the pot from the heat and stir in the vinegar and salt. Let the mixture sit for 5-10 minutes, until the curds have fully formed and separated from the whey.

3. Line a colander with cheesecloth and carefully pour the mixture through, allowing the whey to drain off. 

4. Gather the edges of the cheesecloth and gently squeeze out any remaining whey.

5. Transfer the ricotta cheese to an airtight container and refrigerate until ready to use.

This simple homemade ricotta is perfect for using in lasagna, stuffed shells, or even just enjoying on its own.

 With a little time and a few basic ingredients, you can make a delicious, cost-effective ricotta at home.
