Why Sunflower and Hemp Seeds?

Sunflower seeds are rich in healthy fats, vitamin E, and minerals, while hemp seeds provide a fantastic source of protein and omega-3 fatty acids. Together, they create a nutritious and satisfying bread that’s perfect for sandwiches, toasting, or simply enjoying with a pat of butter.

The Baking Process

Baking sourdough bread does require some patience and practice, but the results are incredibly rewarding. If you’re already familiar with the basics of sourdough, adding seeds is a straightforward way to level up your loaf.

Instructions:

1. Mix the Dough:

   - In a large mixing bowl, combine the bread flour and water. Mix until no dry flour remains. Let it rest for about 30 minutes (this is called autolyse).

2. Add Starter and Salt:

   - After the autolyse, add the active sourdough starter and salt. Mix until fully incorporated.

3. Incorporate Seeds:

   - Gently fold in the sunflower and hemp seeds until evenly distributed throughout the dough.

4. Bulk Fermentation:

   - Cover the bowl with a damp cloth or plastic wrap and let it rise at room temperature for 4-6 hours, performing stretch and folds every 30 minutes during the first 2 hours.

5. Pre-shape the Dough:

   - Once the dough has expanded and feels airy, turn it out onto a lightly floured surface. Pre-shape it into a round and let it rest for 20-30 minutes.

6. Final Shape:

   - Shape the dough into your preferred form (round or oval) and place it into a proofing basket lined with flour.

7. Cold Fermentation:

   - Cover the dough and place it in the refrigerator for 12-24 hours. This step enhances the flavor and texture.

8. Preheat the Oven:

   - When ready to bake, preheat your oven to 450°F (232°C) with a Dutch oven inside.

9. Bake the Bread:

   - Carefully remove the hot Dutch oven from the oven. Gently place the shaped dough inside (you can score the top for a decorative touch) and cover with the lid. Bake for 30 minutes covered, then 15-20 minutes uncovered until golden brown.

10. Cool and Enjoy:

   - Once baked, let the bread cool on a wire rack for at least an hour before slicing. Enjoy the nutty, flavorful slices toasted, with spreads, or as the base for your favorite sandwich.

This sunflower hemp seed sourdough is not just a loaf of bread; it's an experience that combines artistry, nutrition, and flavor.
