From Lemons to Limoncello: Transform Your Bounty into Delicious Treats!

When life gives you lemons, make the most of them! Recently, I scored two big boxes of organic lemons for just $30, and I couldn’t resist the opportunity to create a variety of delicious lemon-based treats and beverages.

 With a bit of sugar and some vodka, I’m set to whip up everything from lemonade concentrate to limoncello. Let’s explore how to make the most of these vibrant lemons and fill your pantry with delightful goodies!

With my bounty of lemons, here’s what I aim to create:

  • 50 pints of lemonade concentrate
  • 5 big batches of lemon peel candy
  • 20 quarts of refreshing lemon water
  • 10 quarts of lemon simple syrup
  • Almost a gallon of homemade limoncello
  • Enough lemon seeds for baby lemon trees, perfect for gifts!

The Recipes

1. Lemonade Concentrate

Ingredients:

  • 20 organic lemons
  • 5 cups sugar
  • 12 cups water

Instructions:

  1. Juice the Lemons: Squeeze the juice from the lemons until you have about 6 cups of fresh lemon juice.
  2. Make Sugar Syrup: In a pot, combine 5 cups of sugar with 12 cups of water. Heat over medium heat until the sugar dissolves.
  3. Mix: Remove from heat and stir in the lemon juice. Allow the mixture to cool.
  4. Store: Pour into pint-sized jars and freeze for up to a year. To serve, mix with water to taste.

2. Lemon Peel Candy

Ingredients:

  • Peels from 10 organic lemons
  • 2 cups sugar
  • 1 cup water
  • Additional sugar for coating

Instructions:

  1. Prepare Peels: Remove the peel from the lemons, avoiding the bitter white pith as much as possible.
  2. Blanch: Boil the peels in water for 10 minutes, then drain and rinse.
  3. Candy the Peels: In a saucepan, combine 1 cup of water and 2 cups of sugar. Bring to a boil, then add the lemon peels. Simmer for about 45 minutes until the peels are translucent.
  4. Dry and Coat: Remove the peels and let them dry on a wire rack. Once dry, roll in additional sugar to coat.

3. Lemon Water

Instructions:

  1. Infuse: Slice remaining lemons and add them to pitchers of water. Let them infuse in the refrigerator for a refreshing lemon-flavored drink.
  2. Serve: Enjoy chilled, and refill with water as needed.

4. Lemon Simple Syrup

Ingredients:

  • 2 cups sugar
  • 1 cup water
  • 1 cup lemon juice

Instructions:

  1. Combine Ingredients: In a saucepan, mix 2 cups sugar, 1 cup water, and 1 cup lemon juice.
  2. Heat: Bring to a boil over medium heat, stirring until the sugar dissolves.
  3. Cool and Store: Let it cool, then store in jars in the refrigerator for up to a month.

5. Homemade Limoncello

Ingredients:

  • Peels from 10 organic lemons
  • 750 ml vodka
  • 2 cups sugar
  • 2 cups water

Instructions:

  1. Infuse: Place the lemon peels in a large jar and cover with vodka. Seal and let it infuse for at least 2 weeks in a cool, dark place.
  2. Make Simple Syrup: Combine 2 cups of sugar with 2 cups of water in a saucepan. Heat until the sugar dissolves, then cool.
  3. Combine: Strain the lemon-infused vodka into the simple syrup and mix well.
  4. Bottle: Pour into bottles and store in the freezer. Serve chilled.

Bonus: Lemon Seeds

  1. Planting: Save the seeds from your lemons and rinse them. Plant them in pots with good soil and water regularly. In a year or two, you’ll have baby lemon trees to give as beautiful gifts!
