🍑 Peach Jam Recipe

📦 Ingredients

  • 4 cups chopped peaches (about 8-10 medium peaches)
  • 2 cups sugar
  • 1 tablespoon lemon juice

📝 Instructions

Step 1 – Prepare the Peaches

Wash, peel, and chop the peaches. Removing the pits, chop the peaches into small chunks.

Step 2 – Cook the Jam

In a large pot, combine the peaches, sugar, and lemon juice. Bring the mixture to a boil over medium-high heat, stirring frequently. Reduce the heat and let it simmer until thickened (about 20-30 minutes). The jam should reach the consistency of a soft set.

Step 3 – Fill the Jars

Sterilize your canning jars according to the manufacturer's instructions. Carefully spoon the hot peach jam into the bottom of each jar, filling them about halfway. Allow the jam to set slightly, which helps in creating distinct layers.

🍉 Watermelon Jelly Recipe

📦 Ingredients

  • 4 cups watermelon purée (strained)
  • 7.5 cups sugar
  • 2 packets liquid pectin (or 1 box)

📝 Instructions

Step 1 – Prepare the Watermelon

Cut the watermelon into chunks and purée in a blender. Strain the purée through a fine mesh sieve or cheesecloth to remove pulp and seeds, leaving clear juice.

Step 2 – Cook the Jelly

In a large pot, combine the strained watermelon juice and sugar. Bring the mixture to a boil, stirring until the sugar is dissolved. Add the liquid pectin and return to a boil. Boil hard for 1-2 minutes. Remove from heat and let it sit for about 15 minutes. This helps prevent the jelly from mixing with the peach jam layer.

Step 3 – Fill the Jars

Using a spoon to gently pour the watermelon jelly over the back of a spoon into the jars on top of the set peach jam. This technique prevents the jelly from creating a hole in the jam. Leave about ¼ inch of headspace at the top of the jar.

🥫 Steam Canning Instructions

Step 1 – Process the Jars

Place the filled jars in a steam canner. Process for 10 minutes, adjusting for altitude as necessary.

Step 2 – Cool and Store

Remove the jars from the canner and let them cool undisturbed for 24 hours. Check seals before storing. Properly sealed jars can be stored in a cool, dark place for up to a year.

🥫 Note: Steam canning is an excellent alternative to water bath canning for high-acid foods like jams and jellies. Always follow safe canning guidelines.

❓ Frequently Asked Questions

Yes! Frozen peaches work well. Thaw them completely before cooking. You may need to cook a few minutes longer as frozen peaches release more liquid.

Liquid pectin works best for watermelon jelly because it sets quickly and stays clear. Powdered pectin can be used but follow the package conversion instructions.

When properly canned and stored in a cool, dark place, it lasts 12-18 months. Once opened, refrigerate and use within 3-4 weeks.

Letting the jelly cool slightly prevents it from mixing into the peach jam layer, ensuring clean, distinct layers. If poured too hot, the layers will blend together.
