But did you know that you can make a delicious jelly using the cores and scraps of those pineapples? It's a fantastic way to reduce waste and create something mouthwateringly sweet. In this article, I'll share with you a simple recipe for pineapple scrap jelly that will leave you craving more. So, let's dive in!

Ingredients:

For Sure Jel:

  • - 4 cups of pineapple juice made from the scraps
  • - 5 1/2 cups of sugar
  • - 2 tbsp of lemon juice
  • - 1 box of regular pectin
  • - 1 thin pat of butter
  • Yields about 7 half-pint jars.

For Ball Classic Pectin:

  • - 6 cups pineapple juice
  • - 1/4 cup lemon juice
  • - 6 3/4 cups of sugar
  • - 8 tbsp of Ball Classic Pectin
  • - 1 thin pat of butter
  • Yields 9 half-pint jars.

Instructions:

1. Collect the pineapple cores and scraps and place them in a large stainless steel pot.

2. Add enough water to cover the pineapple scraps and bring it to a boil. Allow it to cool and then refrigerate for at least 24 hours. For even better flavor extraction, you can let it sit for several days.

3. When you're ready to make the jelly, remove the pot from the refrigerator and bring it back to a boil.

4. Strain the juice through a cheesecloth or a fine-mesh strainer lined with a cotton cloth to separate the liquid from the solids.

5. In a larger bowl, measure out the sugar and set it aside. Mix the pectin with about 1/4 cup of the measured sugar.

6. In a large pot over medium-high heat, combine the pineapple juice, butter, lemon juice, and pectin mixture. Bring the mixture to a boil that cannot be stirred down.

7. Add all of the sugar at once and bring the mixture back to a boil. Let it boil for exactly one minute.

8. If there is any foam on the surface, skim it off using a spoon. Then, carefully ladle the hot jelly into clean and sterile jars, leaving about 1/4 inch of headspace.

9. Wipe the rims of the jars with a paper towel dipped in vinegar to ensure a good seal. Place the lids and rings on the jars, tightening them down finger-tight.

10. Prepare a boiling water bath and process the jars for 10 minutes.

11. After the processing time, remove the lid from the water bath and let the jars sit for 5 minutes. Then, transfer them to a counter and allow them to cool for 24 hours.

12. Finally, label your jars and store them in a cool, dark place until you're ready to enjoy the tropical goodness of your homemade pineapple scrap jelly.
